Catfish / Hush Puppies / Tartar Sauce

This 3 in one recipe is one of my favorite. Try my fish, hushpuppy, and tartar sauce and you will go fishing this weekend. The only thing missing is the coleslaw! 

Fish

• 6 whole catfish / 2 cups fish breading  

Hushpuppies

• 1 cup self rising flour and 3 cups self rising white cornmeal mix

• 1 cup diced green bell peppers

• 3/4 cup corn / 1 cup diced onions

• 1 tbl oil / 2 eggs

• 1/2 cup sugar / 1/2 tsp black pepper

• 1 tbl diced jalapeno peppers (optional)

• 1 cup butter milk

Tartar Sauce

• 1 1/2 cup mayonnaise

• 1 cup drained sweet pickle relish

• 1 tsp Cajun seasoning

• 1 tsp mustard

• 1/2 cup diced onions

• 1/2 tsp lemon juice   

Catfish... Slice your catfish down to the backbone on both sides making vertical cuts every inch. Bread with favorite breading. Work the breading into the slits on both sides as well as all over the fish. Deep fry in oil at 360. When the whole catfish floats to the top leave it in the deep fryer for about 1 to 2 more minutes. Place the hot fish on paper towels for a minute or so to soak up any extra cooking oil.  

Hushpuppies... Mix all the dry ingredients along with the eggs together well. Add butter milk and mix till the mixture has the consistency of real soft cookie dough. Spoon small amounts into 360 oil and cook till golden brown. Start with small amounts because they puff up. Place on paper towels for a minute or so to soak up any extra cooking oil.

Tartar Sauce... Mix everything together and keep it in the refrigerator till you need it.
